I have a silly question about the functionality here. As a former BBEdit user, it's a bit different.

I choose "find in files" and enter my search term and directory. A new document tab opens with all the hits, fragments of the document(s) with the match highlighted.

If I hand edit the hits in this window (I have to edit each document's match to something different in this case), and save, do the actual documents update? There doesn't seem to be a way.

So what does one do with this window?

I'm new to Sublime myself, but I believe the window is just an output for the results of the Find. You seem to be describing Find and Replace, which is available using the third input field of the Find in Files pane (or via Ctrl+Shift+F).
