I store all my projects in a single directory (~/ST2 projects). It would be really helpful if Project->Open Project remembered where I last left it independently of the directory of the last file opened.

You could use “Switch Project in Window” instead.

It opens a directory at the location of the current or most recently opened file - often many levels deeper than I need.
