It’s inconvenient to View > Hide Minimap (or use command pallete) for every window I open.

I’m on Windows and it remembers that the mini-map is closed (or open) when I choose File, New Window, or similar. I haven’t changed any setting so I’m not sure why your set-up behaves differently: soz.
Though not a perfect solution, you can also bind the toggle command to a key. Something along the lines of the following will work.

I am surprised, that there’s not a setting for this. Considering the overall configurability…
