Setting default file type

Hi.

I've just registered SumblimeText after previously using it some time ago and liking it very much. I do have a (hopefully simple) question.

Is there anyway to make the default file encoding for new files UTF-8 and Unix line endings?

As an addendum, new files are always saved with UTF-8 encoding (unless saving via File/Save with encoding), the fallbackEncoding setting is only used when opening a file, if the encoding can't be determined automatically.
