Ubuntu desktop file associations

Hello, Sublimers.
I’ve been using sublime and liking it, but one thing that I noticed on Ubuntu that some of my source files have been associated with sublime such that when I open them from a desktop environment, they open up in sublime instead of gedit. I’d prefer to only have sublime open something if I tell it to with File > Open and rever to my previous desktop behavior. I’ve found some workarounds to associate the files back to gedit, but I was wondering if anyone could point me to where sublime was doing these associations. I would much rather undo them there.
