It would be really helpful to save in a session file
the currently opened files per window and make it
also easy to restore the session.

Something similar that XCode has.

I have some kinda solution that (at least) works for me.

Everything I work on regularly or which is a little bit bigger is in a Project. ST3 allows you to save the current workspace

So I have one project file with like a dozen of workspace files for each task, issue, feature or branch I am working on.

I think this is only available if you’re using a project. You can access them using your project list short cut (CTRL+ALT+P in my case)
