I’ve been tearing off new windows for each of my monitors (which is BRILLIANT, I love it). The only problem is that the windows don’t seem to have the context of the project they were originally opened with. So super+p doesn’t give me access to all of the files in my project, only the ones it was opened with. It appears that these new windows don’t seem to have any tie back to where they came from. I think this would be pretty useful so that:

ctags links would not open a new copy of the same file open in a different window
you don’t have to go back to the main window to interact w/ the project as a whole.

So the workaround for this is to not tear the tabs off, and just run a new instance of ST on the appropriate directory. The windows don’t know about one another, but it’s not been a big deal, in practice.
