Firstly can I just say what a superb editor Sublime is! Very impressive indeed. :D

Q: Are there any plans to support EXT JS 3/4 and CFML(Coldfusion)?

ExtJS is just JavaScript. It's already done.

You could write the theme file yourself for ColdFusion.

Anytime you need a new language, just check for a textmate bundle. Drop that in and it should work. I saw a tweet about it though. Try this:
